Beef Stew
Dinner Recipes--soups

Ingredients

   * 4 cups, sirlion tips, or stew beef cut in 1 inch pieces
   * 1 tablespoonutter,
   * 4 cups, carrots cut in 1 inch pieces
   * 4 cups, potatoes cut in 1 inch pieces
   * 6 cupschicken stock or broth, or beef stock or broth
   * 3 cup diced vidalia onions
   * 1 cup flour
   * Salt and freshly ground black pepper to taste
   * dollop of sour cream

Directions

Season Beef, dredge in flour and brown in butter over medium heat.  Add onions and stock bring to slow simmer.  Roast potatoes in oven at 400 degrees for one hour while stew is simmering.  Simmer potatoes in stew for one and a half hours. Add carrots, simmer for half and hour. garnish with sour cream if desired, and serve
